" Hatch Chile Northwest  endeavors to bring  the taste of the Southwest to the Northwest "  Roasting Hatch Chiles are to be experienced. Its more than just a flavor its a culture a tradition. The Hatch wagon was created  to bring that  roasting aroma  experience  of  New Mexico to the towns and  neighborhoods of the Northwest  Join us in keeping  the tradition alive!

We first carried Hatch at our family owned  produce stand on TV Hwy in Hillsboro, Oregon.  My wife at the time born and raised in Albuquerque recommended  i carry Hatch Green Chile.  I stocked them not knowing how popular they would be.  Hillsboro Cowboys would take a big  bite insisting they were Anaheim's and were reduced to begging for milk.... they sent the "Barkers" up from Hatch then. Now they bost the "Lumbres" which are hotter !    Most prefer Big Jim and Sandia. Soon we got a 10 lb.  table top roaster shipped up from  AZ. The people kept showing up. We Roasted 5000 lbs that season.  A local  grocery chain  discontinued Hatch and  gifted us their large roasters made in  Albuquerque.  That year  the state of Oregon required that we comply to  cooking standards. In Lieu of renting a kitchen  we wanted  to stay mobile and the Hatch Wagon was born!

We Travel the Northwest (Currently in Oregon)  The "Hatch Wagon" is equipped with a walk in cooler, (Stocked with up to 1000lbs  fresh Hatch Chiles)  roaster,  processing kitchen and freezer. We post our schedule here  and  on Facebook @Hatch Chile NW. We fresh roast 4 Varieties of Hatch Chiles :  NM 64 (mild), Big Jim (Med)  Large size makes them great for rellenos, Sandia (hot) & Lumbre  X -  HOT.  They come  in 25 lb cases early in season  (MId July)  and later in 40 lb. burlap sacks.  Reflects Shipping preferences of farms in Hatch . We sell  at local farm markets or roadside in  quantities by volume and fresh roast on site. All prices include roasting. We soon  plan to carry a few hatch menu items and eventually a full menu.
